Vegan Cookies

 

Hey everyone,

Hope everyone is having a great September. I had some spare time on my hands due to being ill and bored at home for a few days (thanks to London Fashion Week), so decided to do some baking. I love baking but never really get round to doing it. As some of you may know already, I love to eat healthy (90% of the time, at least) and due to having a very sensitive stomach, I don’t eat much gluten or dairy products either.

I took the recipe idea from ‘the best 5 ingredient cookie’ recipe on Deliciously Ella’s website as I love her recipes and always use hers as inspiration for when I cook. Since chestnut season is finally starting (and of course I LOVE chestnuts) I wanted to include some of those in my cookies. So I made a few with and some without as well as adding raw dark chocolate pieces into some too.

They were really fun to make and superrr easy. It was my first time making them so I was a little scared as to how they would turn out and to share it with everyone… but I was actually happily surprised at how they turned out so decided why not. They may not be the best looking cookies.. but they sure did taste good so I’m happy 😀

The ingredients:

1 cup of ground almonds
1/2 cup of ground chestnuts
12 medjool dates (soaked in water for 5 mins)
1 tablespoon chia seeds
1 tablespoon flax seeds
3 tablespoons almond milk
2 cubes of raw dark chocolate cut into small pieces

Method: 
pre-heat the oven at 180c, fan setting. 
Place all the ingredients (- the choco chips) in a food processor and whizz until it sticks all together and looks like cookie dough.
Add some chocolate chips, raisins or whatever you may fancy (I actually preferred the plain ones without any chocolate). 
Then create cookie shapes and just stick them into the oven for roughly 15 mins.
